Support non-standard colour order for HUB75 matrix

What happened?

I got a HUB75 matrix off AliExpress, but the colour order is wrong. Is there a way change it ? I'm using a MatrixPortalS3 so I can't just reshuffle the wires

To Reproduce Bug

Just flash WLED and run the default preset. The colour turns out to be purple instead of yellow.

Expected Behavior

The colour order should be R->G->B

Hello, here is the solution I found for my Lyson P4 64x64 LED matrix with colors inverted. This issue could probably be resolved more cleanly using a compilation option for the Matrix Portal S3 and modifying bus_manager.cpp for matrices that do not have a standard color order...

I modified wled00/bus_manager.cpp as follows:

There is no such thing as color order for Hub75, only panels that do not match the spec as pins in hub75 are supposed to be assigned to given colours.

I am aware there are some panels however on sale that are "broken" with the LEDs connected to the wrong pins on the hub75 connector. This could be compensated for in WLED-MM
