while reading through the removed features I realised that maybe we should add some helper methods back to ease the migration.

E.g. having a method that creates a v1 event with time and uuid and spec pre-set to mimic previous behavior. this is not for this PR, but we should consider adding it. i'm unfortunately still too busy to spend extra time here :'( would be grateful if you can move this forward
